- 1 (15 oz) can corn, drained
- 4 cups beef or chicken broth
- 1 cup salsa (mild, medium, or hot)
- 1 tablespoon taco seasoning
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste

Instructions
Step 1: Cook the Ground Beef
- In a large pot, heat olive oil over medium-high heat.
- Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks (about 6–7 minutes). Drain excess fat if needed.
Step 2: Sauté the Vegetables
- Add the onion and garlic to the pot. Sauté for 2–3 minutes, until softened and fragrant.
Step 3: Add the Remaining Ingredients
- Stir in the diced tomatoes, black beans, corn, beef or chicken broth, and salsa.
- Add the taco seasoning, cumin, chili powder, smoked paprika, and salt and pepper. Stir to combine.
Step 4: Simmer the Soup
- Bring the soup to a simmer, then reduce heat and let it simmer for 15–20 minutes to allow the flavors to meld together.
Step 5: Serve and Add Toppings
- Ladle the soup into bowls and top with your favorite toppings, such as shredded cheese, sour cream, cilantro, and avocado. Add a few crushed tortilla chips for some crunch, and squeeze a lime wedge over the top!
