  • 2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup butter (melted)
  • 2 tbsp powdered sugar (for glaze)
  • 12 tbsp milk (for glaze)

Instructions

  1. Prepare the Apples: Peel, core, and dice apples into small chunks. Toss them with cinnamon and a sprinkle of sugar.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt.
  3. Combine Wet Ingredients: In a separate bowl, whisk together eggs, milk, and melted butter.
  4. Mix the Batter: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the spiced apples.
  5. Fill the Muffin Tin: Spoon batter into a greased or lined muffin tin, filling each cup about 3/4 full.
  6. Bake: Bake at 350°F (175°C) for 20-25 minutes, until golden brown and a toothpick comes out clean.
  7. Glaze the Muffins: Whisk powdered sugar and milk to make the glaze. Drizzle over warm muffins.

Notes

  • Use fresh, tart apples (Granny Smith) for a balance of sweetness and tang.
  • The glaze can be omitted for a less sweet muffin.
  • For extra flavor, add chopped nuts (pecans or walnuts) or dried cranberries.
