Description

This Asparagus Goat Cheese Tart features a perfectly flaky crust, creamy goat cheese, and tender asparagus. It’s a surprisingly easy dish that feels luxurious and is perfect for brunch, a light dinner, or as an appetizer when hosting guests. The balance of flavors is out of this world!

Ingredients

  • Fresh asparagus – 1 bunch (about 12-15 stalks)
  • Puff pastry or pre-made tart crust – 1 sheet (about 8 oz / 225g)
  • Goat cheese (crumbled) – 4 oz (about 115g)
  • Eggs – 2 large
  • Heavy cream – 1/2 cup (120ml)
  • Salt – to taste (around 1/4 teaspoon)
  • Pepper – to taste (around 1/4 teaspoon)
  • Fresh herbs (optional, such as thyme or rosemary) – 1 teaspoon (chopped)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Asparagus: Rinse the asparagus, trim the ends, and cut into smaller pieces if needed.
  3. Prepare the Tart Crust: If using puff pastry, unfold and place into a tart pan, pressing into edges. If using tart shell, ensure it’s pre-baked or partially baked.
  4. Mix the Filling: In a bowl, whisk together eggs, heavy cream, salt, and pepper. Add crumbled goat cheese and stir until smooth. Optionally, mix in fresh herbs.
  5. Assemble the Tart: Pour the filling into the tart crust, and arrange asparagus spears evenly on top.
  6. Bake the Tart: Bake for 30-35 minutes or until the filling is set and golden.
  7. Cool and Serve: Let the tart cool for a few minutes, then slice and serve warm or at room temperature.

Notes

  • Goat Cheese Alternatives: Use ricotta or cream cheese for a creamier filling.
  • Crust Options: Puff pastry creates a flaky texture, but shortcrust pastry is also an option.
  • Fresh Asparagus: Use thinner stalks for better tenderness and faster cooking.
