Description

Frikadellen are Germany’s version of juicy, flavorful hamburgers—though they’re more like a cross between a burger and a meatball! These pan-fried patties are packed with savory seasonings, breadcrumbs, and a hint of mustard for extra depth. Perfect for a hearty meal or served with mustard and crusty bread as a classic German street food.

Ingredients

Units Scale
  • 1 lb (450g) ground beef (or a mix of beef and pork)
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 egg
  • 1/2 cup (60g) breadcrumbs
  • 1/4 cup (60ml) milk
  • 1 tbsp Dijon or German mustard
  • 1 tsp Worcestershire sauce (optional, for extra umami)
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried marjoram (or oregano)
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp vegetable oil (for frying)
  • 1 tbsp butter (for frying)

Instructions

  1. Prepare the mixture: In a small bowl, soak the breadcrumbs in milk for about 5 minutes until soft.
  2. Mix the ingredients: In a large mixing bowl, combine the ground meat, softened breadcrumbs, chopped onion, garlic, egg, mustard, Worcestershire sauce, salt, pepper, paprika, marjoram, and parsley. Mix until just combined—do not overmix.
  3. Shape the patties: Form the mixture into 4–6 oval-shaped patties, about 3/4 inch thick.
  4. Heat the pan: Heat vegetable oil and butter in a large skillet over medium heat.
  5. Cook the Frikadellen: Fry the patties for about 5 minutes per side, or until golden brown and cooked through (internal temperature should reach 160°F / 71°C).
  6. Serve: Let the Frikadellen rest for a few minutes before serving. Enjoy with mustard, bread rolls, or as a main dish with mashed potatoes and gravy.

Notes

  • For a more traditional taste, use a mix of ground pork and beef.
  • If you prefer a crispier crust, coat the patties lightly with flour before frying.
  • Leftovers can be stored in the fridge for up to 3 days or frozen for later.
