Description

These Baked Raspberry Donuts are a burst of fresh fruit and sweet flavor in every bite! If you love donuts but prefer a healthier, lighter version, then this recipe is just what you need. Soft, moist, and packed with juicy raspberries, these donuts are the perfect breakfast treat or afternoon snack!


Ingredients

  • 1 cup fresh raspberries (or frozen, thawed and drained)
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 pinch of salt
  • 2 large eggs
  • 1/2 cup milk (dairy or plant-based)
  • 1/4 cup melted butter (or oil)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the Oven and Prepare the Pan:
    Preheat your oven to 350°F (175°C) and lightly grease a donut pan. If you don’t have a donut pan, you can use a muffin tin instead.

  2. Mix the Dry Ingredients:
    In a medium-sized bowl, whisk together the flour, sugar, baking powder, and a pinch of salt.

  3. Combine the Wet Ingredients:
    In a separate bowl, whisk together the eggs, milk, melted butter (or oil), and vanilla extract. Mix well and pour the wet ingredients into the dry ingredients. Stir just until combined.

  4. Fold in the Raspberries:
    Gently fold the raspberries into the batter, being careful not to crush them.

  5. Spoon the Batter into the Pan:
    Spoon the batter into the donut pan, filling each cavity halfway. For muffin tin use, fill each cup 2/3 full.

  6. Bake to Perfection:
    Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool and Serve:
    Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Optionally, glaze or dust with powdered sugar.


Notes

  • For fluffier donuts, substitute buttermilk for regular milk.
  • Don’t overmix the batter to keep donuts light and airy.
