Ingredients
- – 3 pounds beef tenderloin center-cut (also called chateaubriand)
- – Kosher salt
- – 1/4 cup black peppercorns, crushed
- – 1/2 cup unsalted butter (1 stick)
- – 4 sprigs fresh thyme
- – 2 cloves garlic, peeled and chopped
- – 1 shallot, roughly chopped
- For Serving (Optional):
- – Coarse sea salt such as fleur de sel or Maldon
- – Chopped fresh chives

Instructions
1. Preheat the oven to 425°F.
2. Season the beef tenderloin with salt and press the crushed peppercorns onto the meat.
3. In a large skillet, melt the butter over medium-high heat and sear the beef on all sides until browned.
4. Add thyme, garlic, and shallot to the skillet and transfer to the oven to roast for about 30 minutes, or until desired doneness.
5. Let the beef rest for 10 minutes before slicing and serving with optional sauces and garnishes.
