Ingredients
- Ripe bananas: 3-4 medium (the riper, the better)
- Butter: 1/2 cup (113g), melted
- Eggs: 2 large
- All-purpose flour: 2 cups (240g)
- Baking soda: 1 tsp
- Salt: 1/4 tsp
- Sugar: 1/2 cup (100g) white sugar + 1/2 cup (100g) brown sugar
- Sour cream: 1/2 cup (120g)
Instructions
- Preheat and Prep:
Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper. - Mash the Bananas:
In a large mixing bowl, peel and mash the bananas using a fork or potato masher. It’s fine if there are a few lumps, but mash as much as possible. - Mix the Wet Ingredients:
To the mashed bananas, add the melted butter, eggs, sugars, and sour cream. Stir until everything is well combined. - Add the Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture into the wet ingredients, stirring just until incorporated—avoid overmixing. - Pour and Bake:
Pour the batter into your prepared loaf pan. Spread it out evenly and bake for 60–65 minutes. Check with a toothpick; it should come out clean or with just a few crumbs. - Cool and Serve:
Let the banana bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
Notes
- Ripe Bananas are Key: The riper the bananas, the better the flavor and sweetness. For faster ripening, place bananas in a brown paper bag.
- Don’t Overmix: Overmixing can cause the bread to become dense, so mix just enough to combine the ingredients.
- Add Mix-ins: Feel free to fold in chocolate chips, nuts, or shredded coconut for extra flavor.
