Description

This Broccoli Stuffed Chicken Breast is a simple yet delicious dinner idea that’s packed with flavor. Tender chicken breasts filled with a creamy broccoli mixture make for a healthy, comforting, and satisfying meal.

Ingredients

Scale

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh broccoli florets, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1 tablespoon olive oil (for searing)

Instructions

  1. Prepare the Broccoli
Chop the broccoli into small florets. Steam or blanch the broccoli until tender (about 3-4 minutes), then drain and let cool for a few minutes before chopping it finely.

  2. Make the Filling
In a medium bowl, combine the chopped broccoli with cream cheese, Parmesan, garlic powder, salt, and pepper. Mix until you have a thick, creamy stuffing mixture.

  3. Prepare the Chicken Breasts
Cut a pocket in the center of each chicken breast, being careful not to cut all the way through. Season both sides with salt, pepper, and any additional spices (such as paprika or onion powder).

  4. Stuff the Chicken
Spoon the broccoli mixture into each chicken breast pocket and pack it in tightly. Secure with toothpicks if desired.

  5. Sear and Cook the Chicken
Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for 4-5 minutes per side until golden brown. Reduce heat to low, cover the pan, and cook for another 10-12 minutes, or until the internal temperature reaches 165°F.

Notes

  • Pounding the chicken: If your chicken breasts are thick, lightly pound them before stuffing for even cooking.
  • Make ahead: Prepare the chicken ahead of time, refrigerate, and cook later. Just add a few extra minutes to the cooking time.
  • Cheese variations: Add more Parmesan or even mozzarella for extra cheesiness!
  • Don’t overcook the chicken: Use a meat thermometer to avoid drying out the chicken.
