Ingredients
- Boneless, skinless chicken breasts (or thighs) – 2 medium breasts (about 1 lb) or 2 thighs
- Eggs – 2 large
- All-purpose flour – 1/2 cup
- Baking powder – 1 tsp
- Onion powder – 1 tsp
- Garlic powder – 1 tsp
- Salt – 1/2 tsp
- Pepper – 1/4 tsp
- Fresh parsley – 2 tbsp (for garnish)
- Olive oil (for frying) – 2-3 tbsp

Prepare the Chicken
Dice the chicken into small, bite-sized pieces. Season with salt and pepper. -
Mix the Fritter Batter
In a large bowl, whisk together eggs, flour, baking powder, onion powder, garlic powder, salt, and pepper. Add a bit of water if the batter seems too thick. -
Combine the Chicken and Batter
Add the diced chicken to the batter and stir until the chicken is fully coated. -
Fry the Fritters
Heat olive oil in a large skillet over medium heat. Once hot, drop tablespoon-sized portions of the batter into the skillet. Flatten them with a spatula. Fry for 3-4 minutes per side until golden brown and crispy. -
Drain and Serve
Remove the fritters from the pan and drain on paper towels. Garnish with parsley and serve hot.
Notes
- For extra crispy fritters, you can add a tablespoon of cornstarch to the batter.
- If you’re using chicken thighs, they will provide a juicier texture.
