For the Cookie Layers:
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips

- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
Instructions
Step 1: Prep the Oven & Pan
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch baking dish with parchment paper, leaving an overhang for easy removal.
Step 2: Make the Cookie Dough
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a separate large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients and mix until just combined.
- Fold in the chocolate chips.
Step 3: Make the Cheesecake Filling
- In a medium bowl, beat cream cheese and sugar until smooth.
- Add egg and vanilla extract, mixing until fully combined.
Step 4: Assemble the Bars
- Press half of the cookie dough into the bottom of the prepared baking dish.
- Spread the cheesecake mixture evenly over the cookie dough layer.
- Drop spoonfuls of the remaining cookie dough on top, flattening slightly (it won’t fully cover the cheesecake).
Step 5: Bake & Cool
- Bake for 30-35 minutes, or until the top is golden brown and the cheesecake layer is set.
- Let cool completely, then refrigerate for at least 2 hours before slicing.
Step 6: Slice & Serve
- Lift the bars out using the parchment overhang and cut into squares.
- Serve chilled or at room temperature. Enjoy!
Notes
- Use mini chocolate chips for a more even chocolate distribution.
- Make sure the bars are completely chilled before slicing for clean cuts.
