Description

These Chocolate Chip Cookie Cheesecake Bars are the perfect combination of two beloved desserts! A chewy, buttery chocolate chip cookie base is layered with a rich, creamy cheesecake filling and topped with even more cookie dough. They’re easy to make and impossible to resist—perfect for parties, bake sales, or just a sweet treat at home!

For the Cookie Layers:

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions

Step 1: Prep the Oven & Pan

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8-inch baking dish with parchment paper, leaving an overhang for easy removal.

Step 2: Make the Cookie Dough

  1. In a medium bowl, whisk together flour, baking soda, and salt.
  2. In a separate large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients and mix until just combined.
  5. Fold in the chocolate chips.

Step 3: Make the Cheesecake Filling

  1. In a medium bowl, beat cream cheese and sugar until smooth.
  2. Add egg and vanilla extract, mixing until fully combined.

Step 4: Assemble the Bars

  1. Press half of the cookie dough into the bottom of the prepared baking dish.
  2. Spread the cheesecake mixture evenly over the cookie dough layer.
  3. Drop spoonfuls of the remaining cookie dough on top, flattening slightly (it won’t fully cover the cheesecake).

Step 5: Bake & Cool

  1. Bake for 30-35 minutes, or until the top is golden brown and the cheesecake layer is set.
  2. Let cool completely, then refrigerate for at least 2 hours before slicing.

Step 6: Slice & Serve

  1. Lift the bars out using the parchment overhang and cut into squares.
  2. Serve chilled or at room temperature. Enjoy!

Notes

  • Use mini chocolate chips for a more even chocolate distribution.
  • Make sure the bars are completely chilled before slicing for clean cuts.
