Instructions
- Melt the Chocolate and Butter: Melt the semi-sweet chocolate and butter together in a heatproof bowl over a double boiler or in the microwave. Stir until smooth, then set aside to cool slightly.
- Mix the Wet Ingredients: In a large mixing bowl, whisk together the granulated sugar, brown sugar, and eggs until smooth. Stir in vanilla extract. Once the chocolate and butter mixture has cooled slightly, pour it into the egg mixture and stir until fully combined.
- Combine the Dry Ingredients: In a separate bowl, sift together flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Chill the Dough: Cover the dough with plastic wrap and refrigerate for 20-30 minutes to help prevent spreading during baking.
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Form the Cookies: Use a cookie scoop or tablespoon to form dough balls. To make the lava center, press a chunk of chocolate into each dough ball and roll it to seal the chocolate inside.
- Bake the Cookies: Place the dough balls on the prepared baking sheet, spacing them 2 inches apart. Bake for 10-12 minutes, until the edges are set but the center is still soft.
- Cool and Serve: Let the cookies cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
