Description

This Classic French Beef Bourguignon is a hearty and flavorful dish perfect for family dinners and holidays. Tender beef chunks cooked in a rich red wine sauce with bacon, mushrooms, and pearl onions, served with mashed potatoes.

  • 3 pounds beef brisket or chuck steak, cut in big chunks
  • Salt and pepper
  • 8 bacon strips, chopped in big pieces
  • 1 carrot, sliced thick
  • 1 celery stick, sliced
  • 5 garlic cloves, minced
  • 3 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 3 cups pearl onions (around 12)
  • 3 cups red wine
  • 3 cups beef stock
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon parsley, chopped
  • 2 bay leaves
  • 2 tablespoons butter
  • 3 cups button mushrooms, halved

Instructions

  1. Season and sear the beef: Season beef with salt and pepper, then sear in a hot pan until browned. Set aside.
  2. Cook bacon and vegetables: In the same pan, cook bacon, carrot, celery, and garlic until fragrant.
  3. Add tomato paste and flour: Stir in tomato paste and flour, then add back the beef.
  4. Simmer with wine and stock: Pour in red wine and beef stock, add thyme, parsley, and bay leaves. Simmer until beef is tender.
  5. Sauté mushrooms and onions: In a separate pan, sauté mushrooms and pearl onions in butter.
  6. Combine and serve: Add mushrooms and onions to the beef mixture, adjust seasoning, and serve with mashed potatoes.

Notes

  • For a deeper flavor, marinate the beef in red wine overnight before cooking.
  • You can use a slow cooker for this recipe for a hands-off cooking method.
