Instructions

Step 1: Cook the Sausage & Aromatics

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add Italian sausage and cook until browned, breaking it into crumbles with a spoon.
  3. Stir in the onion and sauté for about 3 minutes, until softened.
  4. Add the garlic and cook for 30 seconds, until fragrant.

Step 2: Simmer the Broth

  1. Pour in the diced tomatoes (with juices), chicken broth, Italian seasoning, salt, and black pepper.
  2. Bring to a simmer and let it cook for 10 minutes to develop flavors.

Step 3: Cook the Tortellini & Add Spinach
