- 1 (14.5 oz) can diced tomatoes, undrained
- 4 cups chicken broth
- 1 tsp Italian seasoning
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1 (9 oz) package cheese tortellini (fresh or frozen)
- 2 cups baby spinach
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1 tbsp fresh basil, chopped (for garnish)
Instructions
Step 1: Cook the Sausage & Aromatics
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add Italian sausage and cook until browned, breaking it into crumbles with a spoon.
- Stir in the onion and sauté for about 3 minutes, until softened.
- Add the garlic and cook for 30 seconds, until fragrant.
Step 2: Simmer the Broth
- Pour in the diced tomatoes (with juices), chicken broth, Italian seasoning, salt, and black pepper.
- Bring to a simmer and let it cook for 10 minutes to develop flavors.
Step 3: Cook the Tortellini & Add Spinach
- Add the tortellini and cook according to package instructions (usually 3-5 minutes for fresh, 5-7 minutes for frozen).
- Stir in the baby spinach, letting it wilt into the soup.
Step 4: Finish with Cream & Cheese
- Lower the heat and stir in the heavy cream and Parmesan cheese, stirring until smooth.
- Taste and adjust seasoning if needed.
Step 5: Serve & Enjoy!
- Ladle into bowls and garnish with fresh basil and extra Parmesan.
- Serve warm with crusty bread for dipping!
Notes
- Swap sausage for ground turkey or chicken for a lighter version.
- Use kale instead of spinach for extra texture.
- For a thicker soup, add a slurry of cornstarch and water before stirring in the cream.
- Make it dairy-free by using coconut milk instead of cream and skipping the Parmesan.
