- 1/4 cup all purpose flour
- 1/4 cup cilantro, chopped
- 2 tablespoon coconut oil
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 cup coconut milk
- 2/3 cup chicken broth
- 1 tablespoon brown sugar or sub coconut sugar
- 2 limes
- 1 green onion, chopped
- salt and pepper, to taste
Instructions
- Coat the chicken: Dredge chicken breasts in flour seasoned with salt and pepper.
- Sear the chicken: In a skillet, heat coconut and olive oil, then sear chicken until golden brown.
