  • 1/2 cup shredded mozzarella cheese (optional, for topping)

Instructions

  1. Prepare the crockpot: In a slow cooker, add the cream cheese, diced tomatoes, heavy cream, chicken broth, garlic powder, onion powder, red pepper flakes, and Parmesan cheese. Stir everything together to combine.
  2. Add the tortellini: Add the refrigerated tortellini to the crockpot, stirring gently to coat the pasta in the creamy sauce. Season with salt and pepper to taste.
  3. Cook: Cover and cook on low for 2.5-3 hours or high for 1.5-2 hours, until the tortellini is tender and the sauce has thickened.
  4. Finish and serve: If desired, stir in the shredded mozzarella cheese just before serving to make it extra cheesy. Garnish with fresh basil or parsley, and serve immediately.

Notes

  • You can use frozen tortellini as well, but be sure to adjust the cooking time slightly, as frozen pasta may need an extra 30 minutes to cook.
