Description

These crispy, golden, and flavor-packed Parmesan potatoes are roasted to perfection, with a crispy outer crust and a soft, fluffy inside. Coated with a savory blend of Parmesan cheese, garlic, and herbs, this dish is a perfect side for any meal.

Ingredients

Units Scale
  • 2 pounds baby potatoes, halved or quartered
  • 3 tablespoons olive oil
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme or rosemary (optional)
  • Salt and freshly cracked pepper to taste
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, toss the halved potatoes with olive oil, ensuring they are evenly coated.
  3. Add the grated Parmesan, garlic powder, onion powder, thyme (if using), salt, and pepper. Mix until the potatoes are well-coated with the seasoning and cheese.
  4. Arrange the seasoned potatoes in a single layer on the prepared baking sheet.
  5. Roast the potatoes in the preheated oven for 30-35 minutes, flipping halfway through, until golden brown and crispy on the outside.
  6. Garnish with fresh parsley if desired, and serve hot.

Notes

  • For extra crunch, you can broil the potatoes for the last 2-3 minutes of baking.
  • Feel free to adjust the herbs and spices based on your preference—paprika or Italian seasoning work great too.
