Description

Crockpot Cabbage Rolls are a delicious and hearty dish made with sour cabbage leaves filled with a mixture of ground pork, rice, herbs, and spices, cooked in a savory tomato juice sauce.

  • 2 pounds sour cabbage leaves
  • 2 pounds ground pork
  • 1/2 cup rice
  • 1 large onion, chopped or grated
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper, to taste

Additional Ingredients:

  • 8 ounces bacon or other smoked meats
  • 4 cups tomato juice

Instructions

  1. Prepare the Cabbage: Cut out the core of the cabbage and carefully separate the leaves. Blanch the leaves in boiling water to soften.
  2. Make the Filling: In a bowl, mix ground pork, rice, onion, dill, parsley, salt, and pepper.
  3. Fill and Roll: Place a spoonful of filling onto each cabbage leaf, then roll them up, tucking in the sides.
  4. Cook in Crockpot: Layer the rolled cabbage in the crockpot with bacon pieces and pour tomato juice over them. Cook on low for several hours until tender.
