Description

A cozy twist on Chicken Parmesan, this Crockpot Chicken Parmesan Soup combines tender chicken, rich marinara sauce, and gooey melted cheese, all simmered in your crockpot for an easy, comforting meal. No frying or fuss required!

  • Chicken breasts: 4 boneless, skinless chicken breasts
  • Marinara sauce: 24 oz (about 3 cups)
  • Chicken broth: 4 cups
  • Onion: 1 medium, chopped
  • Garlic: 4 cloves, minced
  • Italian seasoning: 2 teaspoons
  • Parmesan cheese: 1 cup, grated
  • Mozzarella cheese: 1 1/2 cups, shredded
  • Crushed tomatoes: 1 can (14.5 oz)
  • Salt: 1 teaspoon (to taste)
  • Pepper: 1/2 teaspoon (to taste)
  • Pasta: 2 cups (spaghetti, rotini, or your choice)

Instructions

  1. Add the Chicken and Broth: Place chicken breasts at the bottom of the crockpot. Add chicken broth, marinara sauce, and crushed tomatoes. Stir to combine.
  2. Add the Seasonings and Veggies: Add chopped onion, minced garlic, Italian seasoning, salt, and pepper. Stir everything together.
  3. Let It Cook: Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is tender and shreds easily.
  4. Shred the Chicken: Remove the chicken from the soup, shred it with two forks, and return it to the soup.
  5. Add the Pasta: Add pasta and cook on high for 30-40 minutes or until tender (alternatively, cook pasta separately and stir it in).
  6. Add the Cheese: Stir in grated Parmesan and shredded mozzarella. Let sit until the cheese melts.
  7. Serve and Enjoy: Serve hot, topped with extra Parmesan cheese if desired.

  • Extra Flavor: Sauté the onion and garlic before adding to the crockpot for extra depth of flavor.
