Description

This Crockpot Taco Casserole combines all the hearty taco flavors into one easy-to-make dish, perfect for busy nights. With seasoned ground beef, beans, corn, cheese, and a sprinkle of tortilla chips, it’s a comfort food everyone will love. Ingredients

  • 1 lb Ground beef (or ground turkey)
  • 1 packet Taco seasoning (store-bought or homemade)
  • 1 can Black beans (drained and rinsed)
  • 1 cup Corn kernels (fresh, frozen, or canned)
  • 1 can Diced tomatoes (with green chilies for heat, optional)
  • 1 Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1 cup Salsa
  • 2 cups Tortilla chips (crushed)
  • 2 cups Shredded cheese (cheddar, Mexican blend, or preferred)
  • Sour cream (for serving)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Brown the Meat: Cook ground beef (or turkey) in a skillet over medium heat. Drain excess fat, then mix in taco seasoning.
  2. Prepare the Crockpot: Spray the slow cooker with non-stick spray, then add cooked meat, black beans, corn, diced tomatoes, onion, garlic, and salsa.
  3. Stir and Cook: Mix ingredients, then set the slow cooker to low for 4 hours, or high for 2 hours.
  4. Add Chips and Cheese: About 30 minutes before serving, sprinkle crushed tortilla chips and shredded cheese on top, and let it cook until the cheese is melted.
  5. Serve and Enjoy: Serve with sour cream and cilantro, plus optional avocado or lime for extra flavor.

Notes

  • For added spice, include chopped jalapeños or cayenne pepper with the taco seasoning.
  • To sneak in more veggies, add bell peppers, zucchini, or spinach.
