- 1 packet Taco seasoning (store-bought or homemade)
- 1 can Black beans (drained and rinsed)
- 1 cup Corn kernels (fresh, frozen, or canned)
- 1 can Diced tomatoes (with green chilies for heat, optional)
- 1 Onion (chopped)
- 2 cloves Garlic (minced)
- 1 cup Salsa
- 2 cups Tortilla chips (crushed)
- 2 cups Shredded cheese (cheddar, Mexican blend, or preferred)
- Sour cream (for serving)
- Fresh cilantro (optional, for garnish)
Instructions
- Brown the Meat: Cook ground beef (or turkey) in a skillet over medium heat. Drain excess fat, then mix in taco seasoning.
- Prepare the Crockpot: Spray the slow cooker with non-stick spray, then add cooked meat, black beans, corn, diced tomatoes, onion, garlic, and salsa.
- Stir and Cook: Mix ingredients, then set the slow cooker to low for 4 hours, or high for 2 hours.
- Add Chips and Cheese: About 30 minutes before serving, sprinkle crushed tortilla chips and shredded cheese on top, and let it cook until the cheese is melted.
- Serve and Enjoy: Serve with sour cream and cilantro, plus optional avocado or lime for extra flavor.
