Description

This Cuban Roasted Mojo Pork recipe features a flavorful marinade of citrus juices, herbs, and spices, resulting in tender and juicy pork with a zesty kick.


Ingredients

Marinade:

  • 3/4 cup extra-virgin olive oil
  • 1 tablespoon orange zest
  • 3/4 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 1 cup cilantro, finely chopped
  • 1/4 cup lightly packed mint leaves, finely chopped
  • 8 garlic cloves, minced
  • 1 tablespoon minced oregano, 2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • Kosher salt and pepper

Additional:

  • 3 & 1/2 pounds boneless pork shoulder, in one piece*

Instructions

  1. Prepare Marinade: In a bowl, mix olive oil, orange zest, orange juice, lime juice, cilantro, mint, garlic, oregano, cumin, salt, and pepper.
  2. Marinate Pork: Place pork in a resealable bag, pour marinade over it, seal, and refrigerate for at least 4 hours or overnight.
  3. Roast Pork: Preheat oven to 350°F. Remove pork from marinade, place on a roasting pan, and roast for about 2-2.5 hours or until internal temperature reaches 145°F. Let rest before slicing and serving.

Notes

  • *Make sure to trim excess fat from the pork shoulder before marinating for better flavor absorption.
