Marinade:
- 3/4 cup extra-virgin olive oil
- 1 tablespoon orange zest
- 3/4 cup fresh orange juice
- 1/2 cup fresh lime juice
- 1 cup cilantro, finely chopped
- 1/4 cup lightly packed mint leaves, finely chopped
- 8 garlic cloves, minced
- 1 tablespoon minced oregano, 2 teaspoons dried oregano
- 2 teaspoons ground cumin
- Kosher salt and pepper
Additional:
- 3 & 1/2 pounds boneless pork shoulder, in one piece*
Instructions
- Prepare Marinade: In a bowl, mix olive oil, orange zest, orange juice, lime juice, cilantro, mint, garlic, oregano, cumin, salt, and pepper.
- Marinate Pork: Place pork in a resealable bag, pour marinade over it, seal, and refrigerate for at least 4 hours or overnight.
- Roast Pork: Preheat oven to 350°F. Remove pork from marinade, place on a roasting pan, and roast for about 2-2.5 hours or until internal temperature reaches 145°F. Let rest before slicing and serving.

- *Make sure to trim excess fat from the pork shoulder before marinating for better flavor absorption.
