Ingredients
- – 1 lb steak (such as flank or sirloin)
- – Salt and pepper, to taste
- – 2 cups cherry tomatoes, halved
- – 1 cucumber, diced
- – 1/2 red onion, thinly sliced
- – 1/2 cup yellow bell pepper, diced
- – 1/4 cup fresh parsley, chopped
- – 1/2 cup plain Greek yogurt
- – 2 tbsp olive oil
- – 1 tbsp lemon juice
- – 1 garlic clove, minced
- – 1/4 tsp paprika
- – 1/4 tsp cumin
- – Almonds or nuts of choice, for garnish (optional)
Instructions
1. Season the steak with salt and pepper, then grill or cook to your desired doneness. Let it rest before slicing.
2. In a large bowl, combine cherry tomatoes, cucumber, red onion, yellow bell pepper, and fresh parsley.
3. In a small bowl, mix Greek yogurt, olive oil, lemon juice, garlic, paprika, and cumin to make the dressing.
