Instructions

  1. Preheat the Oven and Prepare the Chicken:
    Preheat your oven to 375°F (190°C) and lightly grease a baking dish with cooking spray or olive oil. Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.

  2. Create a Pocket in the Chicken:
    Slice each chicken breast horizontally to create a pocket for the stuffing. Be sure to leave enough space around the edges so the stuffing doesn’t spill out.

  3. Make the Stuffing:
    In a medium bowl, combine the chopped spinach, cream cheese, shredded mozzarella, minced garlic, onion powder, Parmesan, and fresh parsley (if using). Mix until well combined and creamy.

  4. Stuff the Chicken:
    Stuff each chicken breast pocket with the stuffing, using toothpicks to secure the edges and keep the stuffing inside.

  5. Sear the Chicken:
    Heat olive oil in an oven-safe skillet over medium-high heat. Sear each side of the stuffed chicken breasts for 2-3 minutes until golden brown.

  6. Bake the Chicken:
    Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is no longer pink inside.

  7. Rest and Serve:
    Let the chicken rest for 5 minutes before removing the toothpicks and slicing. This helps the juices redistribute.
