Ingredients

  • Chicken breasts or thighs, boneless and skinless – 2 large breasts (about 1 lb or 450 g)
  • Pasta (penne, fettuccine, or spaghetti) – 8 oz (about 225 g)
  • Heavy cream – 1 cup (240 ml)
  • Chicken broth – 1/2 cup (120 ml)
  • Parmesan cheese, freshly grated – 1/2 cup (about 50 g)
  • Garlic, minced – 3 cloves (or 1 tablespoon)
  • Olive oil – 1 tablespoon (for cooking the chicken and sautéing the garlic)
  • Italian seasoning – 1 teaspoon
  • Salt and pepper – to taste (about 1/2 teaspoon salt, 1/4 teaspoon pepper)
  • Fresh basil or parsley (for garnish) – 1 tablespoon (finely chopped)

Instructions

  1. Cook the Pasta:
    Cook the pasta according to the package instructions in salted water until al dente. Drain and set aside, reserving about a cup of pasta water.
  2. Sear the Chicken:
    Heat olive oil in a large skillet over medium heat. Season the chicken with salt, pepper, and Italian seasoning. Cook the chicken for 6-7 minutes per side until golden brown and the internal temperature reaches 165°F (74°C). Remove and set aside to rest.

  3. Make the Creamy Sauce:
    In the same skillet, add more olive oil (or butter) and sauté minced garlic for 30 seconds. Add chicken broth and simmer for 2-3 minutes to reduce.

  4. Add the Cream and Parmesan:
    Lower the heat, stir in heavy cream and grated parmesan cheese. Stir until the sauce becomes smooth and creamy. Season with salt, pepper, and a pinch of Italian seasoning.

  5. Slice the Chicken and Toss It Together:
    Slice the chicken into strips or bite-sized pieces. Add the cooked pasta to the skillet and toss in the creamy sauce, adding reserved pasta water until the sauce reaches your desired consistency. Stir in the sliced chicken.

  6. Serve and Garnish:
