Ingredients

Units Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup olive oil (plus more for brushing)
  • 1/2 cup milk (or dairy-free milk of choice)
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped (or 1 tsp dried rosemary)
  • 1 tablespoon honey or sugar (optional, for a touch of sweetness)
  • 1/2 cup grated Parmesan cheese (optional, for added flavor)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, combine the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the olive oil, milk, and egg.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the garlic, rosemary, and Parmesan cheese (if using).
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Brush the tops of the muffins with a little extra olive oil for a golden finish.
  8. Bake for 15-20 minutes or until the muffins are golden brown and a toothpick comes out clean.
  9. Let the muffins cool slightly before serving.

Notes

  • These muffins can be made ahead and stored in an airtight container for up to 3 days.
  • For a dairy-free version, simply use dairy-free milk and skip the Parmesan or use a dairy-free alternative.
  • If you like more garlic flavor, consider adding roasted garlic to the batter.
