Perfectly seared chicken breasts are smothered in a creamy, herby sauce made with Boursin cheese.   • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup (120ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 1 package (5.2 oz / 150g) Boursin Garlic & Fine Herbs cheese
  • 1 tsp Dijon mustard (optional)
  • Salt and pepper, to taste
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Prepare the chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
  2. Sear the chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 4–5 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside.
  3. Make the sauce: Lower the heat to medium. Add the minced garlic to the skillet and sauté for 30 seconds until fragrant. Deglaze the pan with chicken broth, scraping up any browned bits from the bottom.
  4. Stir in the heavy cream and bring to a gentle simmer. Add the Boursin cheese and Dijon mustard (if using), whisking until the cheese melts and the sauce is smooth and creamy.
  5. Combine and serve: Return the chicken to the skillet, spooning the sauce over the top. Simmer for 2–3 minutes to warm the chicken and marry the flavors.
  6. Garnish with fresh parsley or chives and serve immediately.

Notes

  • Serve with mashed potatoes, pasta, or roasted vegetables for a complete meal.
  • You can substitute Boursin with other creamy, herbed cheeses, such as Alouette or cream cheese with added herbs.
  • For a lighter version, use half-and-half instead of heavy cream.
