Description

This English Muffin Breakfast Pizza is the perfect way to start your day or impress your brunch guests. A crispy, golden English muffin topped with scrambled eggs, crispy bacon, melty cheese, and a drizzle of creamy sauce—it’s a breakfast in pizza form, and it’s absolutely delicious!

Ingredients

  • English muffins – 4 (split in half, makes 8 muffin halves)
  • Eggs – 4 large
  • Bacon or sausage (optional) – 4 slices of bacon or 1/2 cup of cooked sausage (crumbled)
  • Shredded cheddar cheese – 1 cup (about 4 oz)
  • Milk or cream – 2 tablespoons (for the scrambled eggs)
  • Butter – 1 tablespoon (for greasing the pan and scrambling eggs)
  • Salt and pepper – to taste
  • Olive oil – for drizzling (about 1 tablespoon)
  • Optional toppings:
    • Spinach – 1/4 cup (fresh)
    • Tomatoes – 1/2 cup (diced)
    • Mushrooms – 1/4 cup (sliced)
    • Onions – 1/4 cup (sliced)
    • Fresh herbs (parsley, chives, etc.) – 1 tablespoon (for garnish)
  • Optional sauce:
    • Hollandaise sauce – 1/4 cup (for drizzling)
    • Ranch dressing – 1/4 cup (for drizzling)
    • Ketchup – 2 tablespoons (for a simpler version)

Instructions

  1. Preheat the Oven and Prepare the Muffins
Preheat your oven to 375°F (190°C). Split your English muffins in half and place them on a baking sheet, cut side up. Toast them in the oven for about 5-7 minutes, or until they’re crispy and golden brown.

  2. Cook the Bacon or Sausage
While the muffins are toasting, cook your bacon or sausage in a skillet over medium heat. For bacon, cook it until crispy and golden brown (about 5-7 minutes). If using sausage, crumble it into small pieces and cook until browned (about 6-8 minutes).

  3. Scramble the Eggs
Whisk together eggs, a splash of milk or cream, salt, and pepper. In a nonstick skillet, melt butter over medium-low heat, then pour in the egg mixture and cook until scrambled and creamy. Don’t overcook.

  4. Assemble the Breakfast Pizza
Spread the scrambled eggs evenly on each muffin half, top with crumbled bacon or sausage, and sprinkle with shredded cheddar cheese.

  5. Bake the Pizzas
Place the assembled muffins back in the oven for 5-7 minutes, or until the cheese is melted. If you like the cheese browned, use the broiler for 1-2 minutes.

  6. Drizzle and Serve
Drizzle with your preferred sauce (hollandaise, ranch, or ketchup), garnish with fresh herbs, and serve immediately.

Notes

  • Use Fresh Eggs: Fresh eggs create creamier, fluffier scrambled eggs, which make the pizza even better.
  • Customize Your Toppings: Feel free to swap or add veggies like spinach, mushrooms, or tomatoes.
  • Make It Spicy: Add red pepper flakes or hot sauce for an extra kick.
