Description

These Garlic Parmesan Chicken Meatloaves are a healthier, flavor-packed twist on the classic meatloaf. Made with tender ground chicken, savory garlic, and rich parmesan, they are easy to prepare and perfect for a quick, juicy, and delicious weeknight dinner.


Ingredients

  • 1 lb ground chicken (preferably lean)
  • 1/2 cup bread crumbs
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 egg
  • 1/2 small onion, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)
  • 1 tablespoon olive oil (for greasing or cooking)

Instructions

  1. Preheat the Oven and Prep Your Pan
    Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper. Optionally, you can use a loaf pan for easier shaping.

  2. Combine the Ingredients
    In a large bowl, combine the ground chicken, breadcrumbs, parmesan cheese, minced garlic, egg, chopped onion, oregano, basil, salt, and pepper. Mix together until fully incorporated, but don’t overmix.

  3. Form the Meatloaves
    Divide the mixture into 4 equal portions and shape each into an oval-shaped loaf. Place them on the prepared baking sheet with space between them.

  4. Bake to Perfection
    Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C). If you don’t have a thermometer, make sure the inside is no longer pink and the juices run clear.

  5. Serve and Enjoy
    Let the meatloaves rest for a few minutes before serving. Garnish with fresh parsley or additional parmesan if desired.


Notes

  • Use Lean Chicken: Ground chicken is lean and may dry out; breadcrumbs and parmesan help keep it moist.
  • Don’t Overmix: Be gentle when mixing to avoid tough meatloaf. Mix until everything is just combined.
  • Add Extra Flavor: Spice things up with red pepper flakes or a splash of Worcestershire sauce.
