These Garlic Parmesan Chicken Meatloaves are a healthier, flavor-packed twist on the classic meatloaf. Made with tender ground chicken, savory garlic, and rich parmesan, they are easy to prepare and perfect for a quick, juicy, and delicious weeknight dinner.
Ingredients
- 1 lb ground chicken (preferably lean)
- 1/2 cup bread crumbs
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1 egg
- 1/2 small onion, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper (adjust to taste)
- 1 tablespoon olive oil (for greasing or cooking)

Preheat the Oven and Prep Your Pan
Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper. Optionally, you can use a loaf pan for easier shaping. -
Combine the Ingredients
In a large bowl, combine the ground chicken, breadcrumbs, parmesan cheese, minced garlic, egg, chopped onion, oregano, basil, salt, and pepper. Mix together until fully incorporated, but don’t overmix. -
Form the Meatloaves
Divide the mixture into 4 equal portions and shape each into an oval-shaped loaf. Place them on the prepared baking sheet with space between them. -
Bake to Perfection
Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C). If you don’t have a thermometer, make sure the inside is no longer pink and the juices run clear. -
Serve and Enjoy
Let the meatloaves rest for a few minutes before serving. Garnish with fresh parsley or additional parmesan if desired.
Notes
- Use Lean Chicken: Ground chicken is lean and may dry out; breadcrumbs and parmesan help keep it moist.
- Don’t Overmix: Be gentle when mixing to avoid tough meatloaf. Mix until everything is just combined.
