Description

These Giant Lazy Meatballs are a hearty and delicious twist on the classic meatball recipe. They are juicy, flavorful, and perfect for a comforting dinner.


Ingredients

– 4 large slices stale white bread, crusts removed

– 1/2 cup milk

– 1 pound ground beef

– 1 pound ground pork

– 2 1/2 teaspoons kosher salt

– 1 teaspoon freshly ground black pepper

– 1/4 teaspoon dried oregano

– 1 teaspoon onion powder

– 1 teaspoon garlic powder

– 1 pinch cayenne pepper

– 1 tablespoon olive oil

– 1/4 cup freshly grated Parmigiano-Reggiano cheese

– 1/3 cup chopped fresh Italian parsley (optional)

– 2 large eggs, lightly beaten

For the Top:

– 2 cups tomato sauce

– 2 ounces Monterey Jack cheese, shredded

– 1/4 cup grated Parmigiano-Reggiano cheese

– 1 tablespoon chopped fresh Italian parsley


Instructions

1. In a large bowl, soak the bread in milk until softened.

2. Add the ground beef, ground pork, salt, pepper, oregano, onion powder, garlic powder, cayenne pepper, olive oil, Parmigiano-Reggiano cheese, parsley, and eggs. Mix well.

3. Shape the mixture into large meatballs and place them in a baking dish. Pour tomato sauce over the meatballs.

4. Bake in a preheated oven at 375°F for about 45 minutes.

5. Sprinkle the shredded Monterey Jack cheese and grated Parmigiano-Reggiano cheese over the meatballs and bake for an additional 15 minutes.

6. Garnish with chopped parsley before serving.


Notes

  •  For a spicy kick, add more cayenne pepper to the meatball mixture.
  •  You can serve these meatballs over pasta or with crusty bread for a complete meal.
