Ingredients
– 1 pound ground beef
– 1 onion, chopped
– 1 red bell pepper, chopped
– 2 cloves garlic, minced
– 1 cup long grain white rice
– 1/2 teaspoon salt
– 1/2 teaspoon ground cumin
– 2 tablespoons tomato paste
– 1 (14.5 ounce) can diced tomatoes
– 1 1/2 cups lower-sodium beef broth
– 1 (4 ounce can) diced green chiles
– 2 teaspoons Worcestershire sauce
– 1 cup shredded Cheddar or Monterey Jack cheese
– 1 tablespoon chopped green onion or cilantro
Instructions
1. In a large skillet, cook the ground beef over medium heat until browned. Add the onion, bell pepper, and garlic, and cook until vegetables are tender.
2. Stir in the rice, salt, cumin, and tomato paste. Add the diced tomatoes, beef broth, green chiles, and Worcestershire sauce. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until rice is cooked.
3. Sprinkle the cheese on top and cover until melted. Garnish with chopped green onion or cilantro before serving.
Notes
– You can add in some black beans or corn for extra flavor and texture.
– For a spicier kick, try adding some chopped jalapenos or a dash of hot sauce.
