Description

A one-pan meal packed with lean protein from ground turkey and the naturally sweet, hearty flavor of sweet potatoes, perfect for busy nights or meal prepping. Quick to make and easy to clean up!


Ingredients

  • Ground turkey: 1 lb (450g)
  • Sweet potatoes: 2 medium-sized (about 2 cups, diced)
  • Olive oil: 2 tbsp
  • Onion: 1 medium, diced
  • Garlic: 2 cloves, minced
  • Paprika: 1 tsp
  • Cumin: 1 tsp
  • Chili powder: 1 tsp
  • Fresh herbs (optional): 2 tbsp parsley, chopped

Instructions

  1. Prepare the Sweet Potatoes: Peel and dice the sweet potatoes into bite-sized cubes.
  2. Cook the Ground Turkey: Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until no longer pink (6-7 minutes).
  3. Add the Sweet Potatoes and Spices: Add sweet potatoes, garlic, onion, paprika, cumin, and chili powder to the skillet. Stir to coat, then cook for 5 minutes.
  4. Simmer Until Tender: Add ¼ cup of water, cover, and reduce heat to medium-low. Simmer for 10-12 minutes, stirring occasionally, until sweet potatoes are tender.
  5. Finish and Serve: Garnish with parsley, if desired, and serve hot.

Notes

  • To speed up cooking, you can use pre-cooked or canned sweet potatoes.
  • Add a squeeze of lime or cheese for extra flavor.
  • Season the turkey well to avoid blandness.
