Description

These Healthy Apple Muffins are a delicious and nutritious treat, perfect for breakfast or a snack. Packed with grated apple, whole wheat flour, and a hint of cinnamon, these muffins are sure to be a hit with the whole family.

  • 1 large apple (peeled, cored and grated)
  • 3/4 teaspoon cinnamon (ground)
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 3/4 cup whole wheat flour
  • 3/4 cup wheat bran flour (coarse)
  • 1/4 cup almond meal
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1 1 1/2 cups applesauce
  • 1 tablespoon canola oil
  • 2 egg whites
  • 1/4 cup brown sugar (packed)
  • 2 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/4 cup granola

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. Mix dry ingredients: In a bowl, combine whole wheat flour, wheat bran flour, almond meal, baking soda, nutmeg, and salt.
  3. Mix wet ingredients: In another bowl, mix applesauce, canola oil, egg whites, brown sugar, and vanilla extract.
  4. Combine: Gradually add the dry ingredients to the wet mixture. Fold in grated apple, honey, lemon juice, and chopped walnuts.
  5. Bake: Spoon the batter into the muffin cups, filling each about ¾ full. Top with granola. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  6. Cool: Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute the almond meal with another type of nut meal for a different flavor profile.
  • Feel free to add raisins or dried cranberries for an extra burst of sweetness.
