- 1 large apple (peeled, cored and grated)
- 3/4 teaspoon cinnamon (ground)
- 1 tablespoon honey
- 1 teaspoon lemon juice
- 3/4 cup whole wheat flour
- 3/4 cup wheat bran flour (coarse)
- 1/4 cup almond meal
- 1 teaspoon baking soda
- 1/2 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 1 1 1/2 cups applesauce
- 1 tablespoon canola oil
- 2 egg whites
- 1/4 cup brown sugar (packed)
- 2 teaspoon vanilla extract
- 1/2 cup chopped walnuts
- 1/4 cup granola
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
- Mix dry ingredients: In a bowl, combine whole wheat flour, wheat bran flour, almond meal, baking soda, nutmeg, and salt.
- Mix wet ingredients: In another bowl, mix applesauce, canola oil, egg whites, brown sugar, and vanilla extract.
- Combine: Gradually add the dry ingredients to the wet mixture. Fold in grated apple, honey, lemon juice, and chopped walnuts.
- Bake: Spoon the batter into the muffin cups, filling each about ¾ full. Top with granola. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Cool: Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Notes
- You can substitute the almond meal with another type of nut meal for a different flavor profile.
- Feel free to add raisins or dried cranberries for an extra burst of sweetness.
