- 1 lb (450g) Fresh scallops (preferably dry-packed)
- 1–2 tbsp Olive oil or butter
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 Lemon (for serving, cut into wedges)
- Fresh herbs (optional, for garnish – such as parsley or thyme)
Instructions
- Prepare the Scallops: Pat scallops dry with paper towels. Season both sides with salt and pepper.
- Heat the Pan: Add oil or butter to a hot skillet over medium-high heat.
- Sear the Scallops: Place scallops in the pan and cook undisturbed for 2-3 minutes on one side until golden brown. Flip and cook for 1-2 more minutes until opaque and firm.
- Serve and Garnish: Remove from the pan, garnish with fresh lemon juice, and herbs. Serve immediately.
Notes
- Dry-packed scallops are preferred for the best sear.
- Don’t move the scallops once in the pan to avoid losing the golden crust.
- High-smoke point oils like vegetable or avocado oil are ideal for searing.
