- Lemon juice – 2 tablespoons
- Milk – 2-3 tablespoons (adjust for glaze consistency)
Instructions
-
Prepare the Dough:
- Warm the milk in a saucepan until lukewarm. Stir in the sugar and sprinkle the yeast over it. Let it sit for 5-10 minutes until frothy.
- In a large bowl, combine the flour and salt. Add the butter, eggs, lemon zest, lemon juice, and yeast mixture. Stir to combine and knead the dough for 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1-2 hours, or until it doubles in size.
-
Roll the Dough:
- Punch down the dough and roll it out into a 12×18-inch rectangle.
- Spread melted butter over the dough and sprinkle with sugar. Squeeze lemon juice and add lemon zest on top.
- Roll the dough into a log from the long side, pinch the edges to seal, and slice into 12 rolls. Place the rolls in a greased pan, cover, and let rise for 30 minutes.
-
Bake the Rolls:
- Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes until golden brown. Let them cool slightly.
-
Glaze the Rolls:
- Whisk together powdered sugar, lemon juice, and milk to form the glaze. Drizzle over the warm rolls, letting it soak in.
Notes
- Ensure the milk is lukewarm to properly activate the yeast.
- You can make the dough ahead of time and let it rise overnight in the fridge.
- For extra flavor, add a splash of lemon extract to the dough or glaze.
