Description

Ingredients

For the dough:

  • All-purpose flour – 3 1/2 cups (440g)
  • Active dry yeast – 2 1/4 tsp (1 packet)
  • Milk – 1 cup (240 ml)
  • Butter (unsalted) – 1/2 cup (115g), melted
  • Sugar – 1/4 cup (50g)
  • Eggs – 2 large
  • Lemon zest – 2 tablespoons
  • Lemon juice – 2 tablespoons
  • Salt – 1/2 tsp

For the glaze:

  • Powdered sugar – 1 cup (120g)
  • Lemon juice – 2 tablespoons
  • Milk – 2-3 tablespoons (adjust for glaze consistency)

Instructions

 

  1. Prepare the Dough:

    • Warm the milk in a saucepan until lukewarm. Stir in the sugar and sprinkle the yeast over it. Let it sit for 5-10 minutes until frothy.
    • In a large bowl, combine the flour and salt. Add the butter, eggs, lemon zest, lemon juice, and yeast mixture. Stir to combine and knead the dough for 5-7 minutes until smooth and elastic.
    • Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1-2 hours, or until it doubles in size.
  2. Roll the Dough:

    • Punch down the dough and roll it out into a 12×18-inch rectangle.
    • Spread melted butter over the dough and sprinkle with sugar. Squeeze lemon juice and add lemon zest on top.
    • Roll the dough into a log from the long side, pinch the edges to seal, and slice into 12 rolls. Place the rolls in a greased pan, cover, and let rise for 30 minutes.
  3. Bake the Rolls:

    • Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes until golden brown. Let them cool slightly.
  4. Glaze the Rolls:

    • Whisk together powdered sugar, lemon juice, and milk to form the glaze. Drizzle over the warm rolls, letting it soak in.
