Ingredients

Scale
  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14.5 oz) crushed tomatoes
  • 4 cups beef broth (or chicken broth)
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon thyme
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 1/4 cup heavy cream (optional, for a creamy twist)

Instructions

Step 1: Brown the Beef

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add ground beef, breaking it apart with a spoon. Cook for 5-7 minutes, until browned.
  3. Stir in onion and garlic, cooking for another 2 minutes until fragrant. Drain any excess fat if needed.

Step 2: Simmer the Soup

  1. Add chopped cabbage, diced tomatoes, crushed tomatoes, tomato paste, and broth. Stir well.
  2. Season with paprika, oregano, thyme, red pepper flakes, salt, and black pepper.
  3. Bring the soup to a boil, then reduce heat to low and simmer for 30 minutes, stirring occasionally.

Step 3: Finish & Serve

  1. If using, stir in heavy cream for a creamy version.
  2. Taste and adjust seasoning as needed.
  3. Serve hot, garnished with fresh parsley or grated Parmesan (optional).

Notes

  • Low-Carb Tip: Avoid adding rice or starchy fillers to keep this keto-friendly.
  • Make It Spicy: Add extra red pepper flakes or a dash of hot sauce.
  • Storage: Keeps in the fridge for up to 5 days or freezes well for 3 months.
