- 1 cup heavy cream
- 4 cups chicken broth
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped (with their oil)
- 4 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- 1 tbsp Italian seasoning
Instructions
- Sear the Chicken: Season the chicken with salt, pepper, and Italian seasoning. Heat olive oil in a large pot over medium-high heat and sear chicken for 4-5 minutes per side until golden brown. Set aside.
- Prepare the Soup Base: In the same pot, sauté minced garlic for 30 seconds. Add the sun-dried tomatoes and cook for 2 minutes.
- Add Liquids: Pour in the chicken broth and bring to a simmer, scraping up browned bits from the bottom. Stir in heavy cream and simmer for 10 minutes.
- Cook Gnocchi: Drop gnocchi into the soup and cook according to package instructions (usually 2-3 minutes until floating).
- Shred Chicken and Add: Shred the chicken and add it back into the soup with fresh spinach. Let spinach wilt for a few minutes.
- Final Touches: Stir in Parmesan cheese, adjust seasoning if necessary, and serve hot.
