Instructions

  1. Sear the Chicken: Season the chicken with salt, pepper, and Italian seasoning. Heat olive oil in a large pot over medium-high heat and sear chicken for 4-5 minutes per side until golden brown. Set aside.
  2. Prepare the Soup Base: In the same pot, sauté minced garlic for 30 seconds. Add the sun-dried tomatoes and cook for 2 minutes.
  3. Add Liquids: Pour in the chicken broth and bring to a simmer, scraping up browned bits from the bottom. Stir in heavy cream and simmer for 10 minutes.
  4. Cook Gnocchi: Drop gnocchi into the soup and cook according to package instructions (usually 2-3 minutes until floating).
  5. Shred Chicken and Add: Shred the chicken and add it back into the soup with fresh spinach. Let spinach wilt for a few minutes.
  6. Final Touches: Stir in Parmesan cheese, adjust seasoning if necessary, and serve hot.
