Scale
- 2 boneless, skinless chicken breasts (or thighs for extra juiciness)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes (in oil)
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 1 tbsp olive oil (for sautéing)
- Salt and pepper to taste
- Optional: Fresh spinach or kale (for added veggies)
Instructions
-
Sauté the Chicken
- Season the chicken with salt and pepper.
- Heat olive oil in a large pot over medium heat and cook chicken for 6-7 minutes per side until golden brown and cooked through.
- Remove chicken and set aside to rest. Once rested, chop it into bite-sized pieces.
-
Sauté the Aromatics
- In the same pot, add more olive oil if needed. Sauté the onion for 2-3 minutes until softened.
- Add the minced garlic and cook for another minute until fragrant.
-
Add the Sun-Dried Tomatoes
- Stir in chopped sun-dried tomatoes and some of their oil, cooking for an additional 2 minutes to infuse the flavors.
-
Pour in the Broth and Cream
- Add chicken broth and heavy cream to the pot, stirring to combine.
- Bring to a simmer and add thyme, salt, and pepper to taste.
-
Add the Chicken and Cheese
- Add the chopped chicken back into the soup. Stir in the grated Parmesan and let it melt into the soup.
- If using, stir in spinach or kale and allow it to wilt.
-
Simmer and Serve
- Let the soup simmer for 10-15 minutes for the flavors to meld together. Adjust seasoning if necessary.
-
Garnish and Serve
- Serve in bowls and garnish with extra Parmesan or fresh herbs.
Notes
- For extra richness, you can swap heavy cream for half-and-half or a mix of milk and cream.
- Add red pepper flakes for a bit of spice.
- The sun-dried tomatoes really enhance the flavor—don’t skip them!
- To make the soup thicker, blend part of it using an immersion blender or add a little cornstarch mixed with water.
