Instructions

  1. Sauté the Chicken

    • Season the chicken with salt and pepper.
    • Heat olive oil in a large pot over medium heat and cook chicken for 6-7 minutes per side until golden brown and cooked through.
    • Remove chicken and set aside to rest. Once rested, chop it into bite-sized pieces.
  2. Sauté the Aromatics

    • In the same pot, add more olive oil if needed. Sauté the onion for 2-3 minutes until softened.
    • Add the minced garlic and cook for another minute until fragrant.
  3. Add the Sun-Dried Tomatoes

    • Stir in chopped sun-dried tomatoes and some of their oil, cooking for an additional 2 minutes to infuse the flavors.
  4. Pour in the Broth and Cream

    • Add chicken broth and heavy cream to the pot, stirring to combine.
    • Bring to a simmer and add thyme, salt, and pepper to taste.
  5. Add the Chicken and Cheese

    • Add the chopped chicken back into the soup. Stir in the grated Parmesan and let it melt into the soup.
    • If using, stir in spinach or kale and allow it to wilt.
  6. Simmer and Serve

    • Let the soup simmer for 10-15 minutes for the flavors to meld together. Adjust seasoning if necessary.
  7. Garnish and Serve

    • Serve in bowls and garnish with extra Parmesan or fresh herbs.
