Description

A delicious twist on traditional lasagna, this Mexican version swaps out lasagna noodles for flour tortillas layered with seasoned ground beef, refried beans, cheese, and taco sauce.


Ingredients

– 1 1/2 pounds ground beef

– 1/4 cup water

– 1 (1 ounce) packet taco seasoning mix

– 12 (8 inch) flour tortillas

– 1 (14 ounce) can refried beans

– 3 cups shredded Colby-Jack cheese

– 1 (8 ounce) jar taco sauce

– 1 cup shredded Colby-Jack cheese


Instructions

1. Preheat oven to 350°F (175°C).

2. In a large skillet, cook ground beef over medium heat until no longer pink; drain excess fat.

3. Stir in water and taco seasoning mix, simmer for 5 minutes.

4. Place 4 tortillas in the bottom of a 9×13 inch baking dish, overlapping as necessary.

5. Spread half of the refried beans over the tortillas, followed by half of the beef mixture and 1 cup of cheese.

6. Repeat layers, ending with a layer of tortillas on top.

7. Spread taco sauce over the final layer of tortillas and sprinkle with remaining cheese.

8. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10 minutes until cheese is bubbly.

9. Let stand for 5 minutes before serving.


Notes

– You can add diced tomatoes, green chilies, or jalapeños for extra flavor.

– For a healthier version, use ground turkey or chicken instead of beef.
