Ingredients
- 2 lbs russet potatoes (peeled and cubed)
- 1/2 cup unsalted butter (melted)
- 1/2 cup sour cream
- 1/2 cup cream cheese (softened)
- 1 packet ranch seasoning mix
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped green onions (optional)
- Salt and pepper to taste
- 1/4 cup crumbled bacon (optional, for topping)
- 1/2 cup shredded cheddar cheese (for topping)

Prepare the Potatoes: Place the peeled and cubed potatoes in a large pot and cover with water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are tender. Drain and set aside.
