Description

These Mississippi Mud Potatoes are the ultimate comfort food — a cheesy, creamy, and hearty potato dish that’s perfect as a side or even a main course! Loaded with tender potatoes, savory seasonings, and topped with melted cheese, it’s a dish that will have everyone coming back for seconds.

  • 1/2 cup unsalted butter (melted)
  • 1/2 cup sour cream
  • 1/2 cup cream cheese (softened)
  • 1 packet ranch seasoning mix
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions (optional)
  • Salt and pepper to taste
  • 1/4 cup crumbled bacon (optional, for topping)
  • 1/2 cup shredded cheddar cheese (for topping)

Instructions

  1. Prepare the Potatoes: Place the peeled and cubed potatoes in a large pot and cover with water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are tender. Drain and set aside.

  2. Mash the Potatoes: In a large mixing bowl, mash the cooked potatoes with a potato masher or fork until smooth.

  3. Make the Creamy Mixture: In a separate bowl, combine the melted butter, sour cream, cream cheese, and ranch seasoning mix. Stir until smooth and well combined.

  4. Combine: Add the creamy mixture to the mashed potatoes and mix until everything is evenly combined. Season with salt and pepper to taste.

  5. Cheese: Stir in the shredded cheddar and mozzarella cheeses, reserving some for topping.
