Ingredients

Units Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 3/4 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon (for the swirl)
  • 1 cup powdered sugar (for the glaze)
  • 2 tbsp milk (for the glaze)

Instructions

  1. Preheat the oven and prepare the tin
Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. Mix the dry ingredients
In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and cinnamon.
  3. Combine the wet ingredients
In a separate bowl, whisk together melted butter, milk, eggs, and vanilla extract until smooth.
  4. Mix the wet and dry ingredients
Add the wet mixture to the dry ingredients and stir until just combined. Do not overmix.
  5. Prepare the cinnamon swirl
In a small bowl, combine brown sugar and cinnamon. Spoon the batter into the muffin tin, filling each cup about halfway. Sprinkle the cinnamon-sugar mixture on top of each muffin and swirl it gently using a toothpick or skewer.
  6. Bake
Bake the muffins for 20-25 minutes, or until a toothpick comes out clean. Let them cool for a few minutes.
  7. Glaze and serve
Mix the powdered sugar and milk to make the glaze. Drizzle the glaze over the muffins once they’ve cooled slightly. Serve warm and enjoy!

Notes

  • For a thicker glaze, add more powdered sugar until it reaches your desired consistency.
  • These muffins freeze well. Wrap them tightly in plastic wrap and freeze for up to 3 months. Reheat in the microwave or oven.
