Ingredients
For the cookies:
- 1 1/2 cups rolled oats
- 1 cup butter (softened)

Instructions
- Make the Cookie Dough:
In a large mixing bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs, one at a time, then add the vanilla extract. In another bowl, combine the rolled oats, flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients and mix until well combined. -
Scoop the Dough:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Drop spoonfuls of dough onto the sheet, spacing about 2 inches apart. Flatten each slightly with the back of a spoon. -

Prepare the Frosting:
