  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 cups fresh spinach
  • 1/4 cup grated Parmesan cheese

Instructions

1. Cook the Ground Chicken
In a large pot, heat the olive oil over medium heat. Add the ground chicken and cook until browned, breaking it apart with a spoon as it cooks. Once browned and cooked through, remove the chicken from the pot and set it aside.

2. Sauté the Vegetables
In the same pot, add a bit more olive oil if needed and toss in the onion, garlic, carrots, and celery. Sauté for 5-7 minutes, until the vegetables soften and become fragrant.

3. Add the Liquids and Seasonings
Return the cooked chicken to the pot. Add the chicken broth, basil, oregano, thyme, salt, and pepper. Stir to combine and bring the mixture to a simmer. Let it simmer for 10 minutes to allow the flavors to develop.

4. Stir in the Cream
Pour in the heavy cream and stir. Let the soup simmer for an additional 5-7 minutes, thickening slightly.

5. Add Spinach and Parmesan
Stir in the spinach and Parmesan cheese. Continue cooking for another 2-3 minutes until the spinach wilts and the cheese melts into the soup.

6. Serve
Serve the soup hot, garnished with extra Parmesan, if desired. Enjoy with crusty bread or a light salad on the side.
