Description

  • 1/4 cup vegetable oil

Instructions

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, beat the eggs and add orange juice, orange zest, yogurt, vegetable oil, and vanilla extract. Mix until smooth.
  3. Gradually fold the wet ingredients into the dry ingredients, stirring until just combined (don’t overmix).
  4. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  5. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
