- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs and add orange juice, orange zest, yogurt, vegetable oil, and vanilla extract. Mix until smooth.
- Gradually fold the wet ingredients into the dry ingredients, stirring until just combined (don’t overmix).
- Scoop the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-22 minutes or until a toothpick inserted comes out clean.
- Let the muffins cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
