Description

This Overnight Breakfast Casserole is the perfect make-ahead breakfast for a crowd. With a combination of eggs, milk, bread, sausage, and cheese, it offers a comforting and savory start to your day. Simply prepare it the night before and bake it in the morning for a warm, delicious breakfast that’s perfect for holidays, weekends, or busy weekdays.

Ingredients

  • Eggs: 8 large eggs
  • Milk: 2 cups whole milk (or any milk of your choice)
  • Bread: 6-8 slices (about 4 cups cubed) of your choice of bread (sourdough, whole wheat, or buttery croissant)
  • Cooked sausage or bacon: 1 lb cooked sausage or 6 slices cooked bacon, crumbled (or a mix of both)
  • Shredded cheese: 2 cups shredded cheddar cheese (or your preferred cheese)
  • Salt: 1 tsp (adjust to taste)
  • Pepper: 1/2 tsp (adjust to taste)
  • Optional seasonings: 1/2 tsp garlic powder, 1/2 tsp onion powder (optional for added flavor)

Instructions

  1. Prepare the Casserole Dish: Grease a 9×13-inch casserole dish with butter or cooking spray.
  2. Layer the Bread and Meat: Tear bread into chunks and layer it in the casserole dish. Add cooked sausage or bacon on top.
  3. Whisk the Eggs and Milk: In a bowl, whisk eggs, milk, salt, pepper, and optional seasonings (garlic powder, onion powder).
  4. Pour Over Bread: Pour the egg mixture evenly over the bread and meat. Press down gently so the bread soaks up the liquid.
  5. Refrigerate Overnight: Cover the casserole and refrigerate overnight.
  6. Bake: The next morning, preheat oven to 350°F (175°C). Bake uncovered for 45-50 minutes until golden brown and set.

Notes

  • Make Ahead: This casserole can be prepared the night before and baked the following morning.
  • Use Day-Old Bread: It absorbs the egg mixture better and gives a custardy texture.
  • Optional Add-ins: Add extra cheese, vegetables (spinach, peppers), or different meats like turkey sausage or ham.
  • Freezing: Can be frozen before or after baking. Thaw overnight in the fridge if freezing before baking.
