- 1/2 cup Butter, softened
- 1 cup Brown sugar
- 2 Eggs
- 1 tsp Vanilla extract
- 1 1/2 cups All-purpose flour
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1/2 cup Jam or jelly (strawberry, grape, raspberry, or your preferred flavor)
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper, lightly greased with cooking spray.
- In a large mixing bowl, cream together peanut butter, butter, and brown sugar until smooth and fluffy.
- Add eggs and vanilla extract to the mixture and mix until smooth and well combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring just until combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Drop spoonfuls of jam or jelly randomly over the batter and swirl them in with a knife or skewer.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the blondies to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Slice into squares or rectangles.
