Description

Peanut butter lovers, rejoice! This Peanut Butter Quick Bread is a delightful treat that combines the rich, creamy goodness of peanut butter with a soft, moist loaf that’s perfect for breakfast, snack time, or dessert. Easy to make and full of flavor, this bread is a crowd-pleaser that will have your kitchen smelling amazing!

Ingredients

Units Scale
  • 2 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup peanut butter (creamy or chunky)
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 large eggs
  • 1 cup milk
  • 2 tsp vanilla extract
  • 1/2 cup vegetable oil

Instructions

  1. Preheat the Oven and Prepare the Pan
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal after baking.
  2. Mix the Dry Ingredients
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

  3. Combine the Wet Ingredients
In a large mixing bowl, beat peanut butter, granulated sugar, and brown sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in the milk and vanilla extract until fully combined.

  4. Add Dry Ingredients to Wet Ingredients
Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined. Be careful not to over-mix.

  5. Bake the Bread
Pour the batter into the prepared loaf pan, spreading it evenly. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover it loosely with aluminum foil for the last 15 minutes.

  6. Cool and Serve
Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

  • For an extra peanut butter flavor, swirl in extra peanut butter before baking.
  • For a chunkier texture, use chunky peanut butter.
  • To make it extra moist, try adding a tablespoon of honey or sour cream.
  • Check for doneness at the 50-minute mark to avoid overbaking.
