- 4 medium potatoes, peeled and cubed
- 2 cups green beans, trimmed
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the cubed potatoes on a baking sheet, drizzle with olive oil, and season with garlic powder, onion powder, dried thyme, salt, and pepper. Toss to coat evenly.
- Roast the potatoes for 25-30 minutes, or until golden and crispy, tossing halfway through.
- While the potatoes are roasting, steam or blanch the green beans in boiling water for about 3-4 minutes until tender but still bright green. Drain and set aside.
- Once the potatoes are done, remove from the oven and add the green beans to the baking sheet with the potatoes. Toss to combine.
- Roast for an additional 5-7 minutes until the green beans are heated through.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, sprinkle with grated parmesan cheese before serving.
