Description

This simple and delicious dish combines tender, roasted potatoes with vibrant green beans. Perfect as a side dish for any meal, it’s packed with flavor, texture, and nutritional benefits.


Ingredients

  • 4 medium potatoes, peeled and cubed
  • 2 cups green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the cubed potatoes on a baking sheet, drizzle with olive oil, and season with garlic powder, onion powder, dried thyme, salt, and pepper. Toss to coat evenly.
  3. Roast the potatoes for 25-30 minutes, or until golden and crispy, tossing halfway through.
  4. While the potatoes are roasting, steam or blanch the green beans in boiling water for about 3-4 minutes until tender but still bright green. Drain and set aside.
  5. Once the potatoes are done, remove from the oven and add the green beans to the baking sheet with the potatoes. Toss to combine.
  6. Roast for an additional 5-7 minutes until the green beans are heated through.
  7. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, sprinkle with grated parmesan cheese before serving.
  • This dish pairs well with grilled chicken, steak, or fish.
  • You can also add a squeeze of lemon juice for a fresh touch.
