- 12 Fresh sage leaves
- 2 tbsp Olive oil

Sear the Pork Tenderloin:
Heat olive oil in a skillet over medium-high heat. Add the prosciutto-wrapped pork and sear on all sides for about 3-4 minutes until crispy and golden. -
Roast the Pork:
Preheat oven to 400°F (200°C). Transfer the skillet to the oven and roast the pork for 15-20 minutes or until internal temperature reaches 145°F (63°C). -
Make the Crispy Sage:
Heat olive oil in a small pan over medium heat. Add fresh sage leaves and fry for 1-2 minutes until crispy. Remove and drain on paper towels. -
Rest and Serve:
Let the pork rest for 5-10 minutes. Slice into medallions and garnish with crispy sage. Serve with your favorite sides.
