Description

A vibrant cocktail that blends the tropical sweetness of passionfruit with the tanginess of raspberries, complemented by the boldness of tequila and a touch of lime. It’s the perfect balance of sweet, sour, and smooth, ideal for your next happy hour or evening on the patio.


Ingredients

  • 2 oz Tequila (preferably silver or blanco)
  • 56 Fresh raspberries
  • 1 oz Passionfruit puree or fresh passionfruit pulp
  • 1 oz Fresh lime juice
  • 1/2 oz Simple syrup (or agave syrup)
  • 1 Egg white (for frothiness)
  • Ice cubes

Instructions

  1. Prepare the Fruit: Scoop the pulp from 1-2 fresh passionfruits and muddle a handful of raspberries in a bowl to release their juices.
  2. Shake the Ingredients: In a cocktail shaker, combine tequila, muddled raspberries, passionfruit pulp, lime juice, simple syrup, and egg white. Add ice halfway.
  3. Dry Shake: Shake without ice for 15 seconds to emulsify the egg white and form foam.
  4. Shake with Ice: Add ice and shake vigorously for 15-20 seconds until well-chilled and frothy.
  5. Strain and Serve: Strain into a rocks or coupe glass. Garnish with raspberries or a lime twist.

Notes

  • If fresh raspberries are out of season, use frozen raspberries or raspberry puree.
  • To adjust sweetness, vary the amount of simple syrup or agave syrup.

 

  • For a vegan version, substitute egg white with aquafaba (chickpea brine).
