- 5–6 Fresh raspberries
- 1 oz Passionfruit puree or fresh passionfruit pulp
- 1 oz Fresh lime juice
- 1/2 oz Simple syrup (or agave syrup)
- 1 Egg white (for frothiness)
- Ice cubes
Instructions
- Prepare the Fruit: Scoop the pulp from 1-2 fresh passionfruits and muddle a handful of raspberries in a bowl to release their juices.
- Shake the Ingredients: In a cocktail shaker, combine tequila, muddled raspberries, passionfruit pulp, lime juice, simple syrup, and egg white. Add ice halfway.
- Dry Shake: Shake without ice for 15 seconds to emulsify the egg white and form foam.
- Shake with Ice: Add ice and shake vigorously for 15-20 seconds until well-chilled and frothy.
- Strain and Serve: Strain into a rocks or coupe glass. Garnish with raspberries or a lime twist.
Notes
- If fresh raspberries are out of season, use frozen raspberries or raspberry puree.
- To adjust sweetness, vary the amount of simple syrup or agave syrup.
- For a vegan version, substitute egg white with aquafaba (chickpea brine).
