Description

Rattlesnake pasta combines juicy, seasoned chicken with a kick of spice, all wrapped in a smooth, creamy sauce. It’s comfort food with a spicy twist, perfect for weeknights or impressing guests.


Ingredients

  • Chicken breasts or thighs: 2 medium chicken breasts or 4 small thighs (about 1 lb or 450g)
  • Cajun seasoning: 2 tablespoons (adjust to taste for spice level)
  • Garlic: 3 cloves, minced
  • Heavy cream: 1 cup (240ml)
  • Parmesan cheese: 1/2 cup, grated (about 50g)
  • Pasta (penne or fettuccine): 8 oz (225g)
  • Olive oil: 1 tablespoon (for cooking)
  • Salt: to taste
  • Black pepper: to taste

Instructions

  1. Cook the Pasta: Boil pasta in salted water until al dente. Drain and set aside, keeping a little pasta water in case you need to adjust the sauce later.
  2. Prepare the Chicken: Heat a large pan over medium heat. Season chicken with Cajun seasoning, salt, and pepper. Sauté chicken in olive oil until golden and cooked through (6-7 minutes on each side). Slice thinly.
  3. Make the Creamy Sauce: In the same pan, sauté minced garlic for 30 seconds until fragrant. Add heavy cream, bringing it to a simmer. Stir in Parmesan cheese until it melts into a creamy sauce.
  4. Combine Pasta and Chicken: Add cooked pasta and sliced chicken to the pan, tossing to coat in the sauce. Add pasta water if the sauce is too thick.
  5. Finishing Touches: Sprinkle with more Cajun seasoning, salt, and pepper to taste. Simmer for 2-3 minutes until everything is well heated.
