Description

This hearty and delicious Breakfast Casserole, filled with eggs, sausage, cheese, and spices, is the perfect make-ahead dish. It’s simple to prepare and great for busy mornings, holiday breakfasts, or brunch gatherings. Make it the night before, pop it in the oven in the morning, and enjoy a comforting, flavorful start to the day.

Ingredients

Units Scale
  • 1 lb breakfast sausage (or bacon, if preferred)
  • 8 large eggs
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 6 cups cubed bread (preferably stale or day-old)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp ground mustard
  • 1 tsp onion powder

Instructions

  1. Cook the Sausage: Heat a large skillet over medium heat. Add the breakfast sausage and cook until browned and fully cooked, breaking it up into small crumbles. Drain excess fat and set the sausage aside.
  2. Prepare the Bread: Cube the bread into small pieces. Spread evenly in the bottom of a greased 9×13-inch baking dish.
  3. Mix the Egg Mixture: In a bowl, whisk together eggs, milk, salt, pepper, onion powder, and ground mustard. Pour the mixture evenly over the cubed bread and press down gently to ensure the bread absorbs the liquid.
  4. Add Sausage and Cheese: Evenly distribute the cooked sausage over the bread. Sprinkle shredded cheddar cheese on top.
  5. Chill and Bake: Cover and refrigerate overnight (optional). Preheat oven to 350°F (175°C) and bake for 45–50 minutes, or until the eggs are set and the top is golden brown.
  6. Serve and Enjoy: Let the casserole cool for a few minutes before slicing and serving. Enjoy it with a side of fruit or sour cream if desired.

Notes

  • Make it spicy: Use spicy sausage or add red pepper flakes to the egg mixture for an extra kick.
  • Bread options: Sourdough, whole wheat, or even croissants work great in this casserole.
  • Make-ahead magic: Prepare the casserole the night before for an easy, stress-free morning.
